The Science of Cinnamon Rolls: Moisture, Gluten, and Why the Rules Work
Every fix on this site (weigh your flour, don't drown the yeast, pull the pan at 190°F) is a rule of thumb standing in for some piece of food chemistry. You don't need the chemistry to bake a good pan of rolls; the rules of thumb are enough. But knowing what's actually happening in the bowl and the oven makes it a lot easier to diagnose a roll that went wrong, instead of just re-following a recipe and hoping.
It's mostly a story about water
